Ingredients

    1 c. zucchini, shredded
    3 eggs (or egg substitute)
    1/2 c. almond flour
    1/2 c. coconut milk
    1/2 c. walnuts
    2 Tbsp. coconut oil
    2 Tbs. coconut flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    2 tsp pumpkin pie spice.

Tips

I double this recipe to make more at one time and then freeze to reheat during the week for a quick breakfast.


Directions

Mix dry ingredients together, then add wet. Mix well. Fry on griddle.
