Ingredients

    2 c Oats

    1 c unsalted/low-sodium trail mix w/dark chocolate morsels

    2 tbsp Earth Balance buttery spread

    2 tbsp brown sugar

    4 tbsp creamy peanut butter

    1 tbsp honey

    1 small to medium banana, mashed

    2 tbsp peanut butter morsels (optional, for decoration)

Tips

I chose to use an unsalted nut/seed mix that had chocolate chips and raisins, but I picked the raisins out.

If you choose a mix that has dried bananas, just leave out the mashed banana.

Once cooled and cut, wrap them individually and store in fridge. If you used the mashed banana, you'll definitely want to refrigerate them until you're ready to eat or pack to go.

Feel free to experiment with this one!


Directions

Heat oven to 350 degrees. In a cookie sheet/shallow pan lined with parchment paper, add oats. Roast in oven for 8 to 10 minutes or until golden brown and fragrant.

In the meantime, in a small sauce pan on medium heat, bring to a light boil the buttery spread, brown sugar, peanut butter and honey. Turn off heat.

Add roasted oats to a large mixing bowl, along with trail mix and stir together. Add peanut butter mixture to bowl with oats and trail mix.

If your mix does not have dried banana, add the mashed banana to the mixture. Mix everything together well.

In a foil or parchment lined 8x8 baking pan, add mixture. If you would like to add dots of peanut butter morsels, press them evenly into the mixture.

Let mixture cool or at least 2 hours before cutting into 8 individual bars.

Serving Size: Makes 8 bars in an 8x8 pan.
