Introduction

Ingredients

    0.5 pounds reduced fat marble jack cheese, shredded
    2 tablespoons butter, cut in small cubes
    2 packages frozen spinach, thawed, drained, squeezed out (take out of freezer a day in advance or microwave)
    7 tbsp flour (approx 0.5 cups)
    24 oz (1 large) 1% cottage cheese small curd
    1 large onion and 1 8oz fresh (or canned) mushrooms, sautéed in butter/ spray
    1 tbsp dried basil or 0.25 cups fresh
    7 eggs
    Black pepper to taste (I stand and turn the pepper mill until my hand gives out)

Directions

Preheat oven to 350 degrees. Mix butter and grated cheese in bowl. Add cottage cheese, spinach, flour, onions and mushrooms. Beat eggs well in separate bowl and mix in. Pour mixture into greased 9x13 pan (spray oil works). Bake at 350 degrees for 1 hour. Rewarms well.
