Introduction
These are just my regular pancakes, no substitutions made for nutritional value. These are just my regular pancakes, no substitutions made for nutritional value.Number of Servings: 16
Ingredients

2 cups all purpose flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups well shaken buttermilk (I use vinegar and skim milk)
2 large eggs
1/4 cup EVOO
Directions
Mix dry ingredients in medium bowl.
Add wet ingredients to a separate bowl and stir until just blended.
Add wet ingredients into dry ingredients until just combined. Do not over mix.
Lightly coat skillet with oil and heat to medium low.
Add pancake batter with whatever size scoop you like - I use one soup ladle for 2 pancakes.
Makes about 16 pancakes.
Serving Size: About 16 pancakes if using soup ladle for 2 pancakes.
