Ingredients

    3 Cups flour
    1 1/8 sugar
    2.5 tsp cinnamon
    2.25 tsp baking powder
    4 large eggs
    1 cup plus 1 T. vegetable oil
    1 T. vanilla
    3 cups peeled, grated carrots
    2 cups zucchini, unpeeled
    2 cups apples, grated
    1/2 cup nuts
    1/2 cup craisins

Tips

Optional add 1/2 cup shredded coconut.


Directions

Bake @ 400 degrees for 16 minutes.
