Rolled oats, baking powder, eggs, honey, greek yogurt, applesauce, blueberries
Tips
These muffins freeze really well. Remove from freezer and microwave for 1 - 1 1/2 minutes and they taste fresh!
Directions
Preheat oven to 350°. Grease muffin tins or line with foil liners.
Process oats in a food processor until it looks like a coarse flour. Add the baking powder and pulse to mix.
In a large bowl, combine the honey and eggs and mix well. Add the oat flour to the bowl and mix.
Add the yogurt and applesauce to the mixture and mix until combined. Stir in the berries.
Fill muffin liners almost to the top as these won't rise very much. Bake for 15-20 minutes or until toothpick inserted comes out clean.
Serving Size: makes 12 muffins
