Introduction
Wheat berries are a nice change from brown rice! Kale is great for you, and Italian Turkey Sausage gives you all the flavor of a full-fat sausage, with less calories and fat! Ingredients

1 1/2 cups wheat berries
1/4 teaspoon dried thyme
1/2 teaspoon salt
2 medium onions, chopped, divided
10 oz. (2 1/2 links, 1/2 pkg.) Jeanie-O Italian Turkey Sausages
1/4 teaspoon salt
Freshly ground black pepper
1 bunch kale, stemmed, leaves torn into 2-inch pieces (about 6 packed cups)
1 tablespoon fresh lemon juice
Directions
Start Cooking the Wheat Berries:
Place Wheat Berries, thyme and 1 diced onion in a large saucepan. Cover with 2" water (above the level of the berries). Bring to a boil, reduce to a simmer, and cook for about 35 minutes or until tender but still firm - not mushy. Drain through a colander and set aside.
Meanwhile:
Cut sausages in half lengthwise, then across into bite sized pieces. Spray a very large skillet with cooking spray, and add sausage and other diced onion. Cook over med/high heat until sausage is done and onions are browning. Remove meat and onions to a bowl (if wheat berries are done, just add to that drained pot).
Spray more oil into skillet, and add kale and salt. Work in batches if necessary, until all is added and wilted. Ideally, all the kale, sausage and wheat berries can be added to the skillet to heat and brown. If not, at least toss everything together in a large bowl. Brown in batches, if desired.
Add fresh cracked pepper to taste during the browning and tossing. Sprinkle lemon juice over everything at the end. Serve with fresh shredded parmesan cheese, if desired (not included in nutritional info.)
