Ingredients

    1/4 c vegetable broth
    2-3 shallots, chopped
    3 cloves garlic, minced
    2 tsp ground coriander
    1 tsp fresh minced ginger
    1 bunch collard greens
    1/2 tbsp garam masala (or to taste)

Directions

Saute shallots and garlic in vegetable broth. Add 1 tsp coriander, add ginger, and stir to combine. Chop the collard greens (remove stems) and add to the pan. Cook until wilted, then transfer to a blender. Pulse until creamed; do not puree. Add the garam masala, and pulse again. Add a bit of water if too thick. Transfer back to pan to heat, and then serve.
