Introduction

Ingredients

    1 pkg Betty Crocker Cake Mix (You can use yellow, spice or carrot cake mix... your choice)
    1 15 oz can pure pumpkin
    2 large eggs
    1 cup water
    1 tsp pumpkin pie spice
    2 tsp cinnamon
    1/2 tsp nutmeg

    Note: You can adds walnuts or pecans but they are not included in the nutritional calculations.

Directions

Preheat oven to 350 degrees.

In mixing bowl empty full cake mix and add the spices. Next add in the eggs, can of pumpkin and water. Mix until all ingredients are combined.

Use large muffin tins to make 10 or you can use smaller muffin tin and make 20 (so you can have 2 muffins rather than 1). Fill muffin tins with paper cupcake holders or spray with a non-stick spray. Fill each muffin tin about 3/4 of the way full.

Bake in center of the oven for 25 to 30 minutes until the muffin springs back when touched.

Let cool. Add cream cheese frosting if you desire.

Serving Size: Makes 10 muffins
