Indian creamy curried spinach Indian creamy curried spinach

    1 cup chopped onion
    2 cloves garlic
    curry powder
    1 pkg frozen chopped spinach
    1 can diced tomatoes drained
    2-3 dollops of fat free/low fat sour cream
    cooked white rice


Saute onion and garlic in 2 Tbs canola oil. Add 1 or more Tbs of curry. Add drained tomatos and let simmer for 20 minutes. Add frozen spinach and let everything simmer until spinach thaws out. Add sour cream and mix 10 minutes before serving. Serve over rice.
