Ingredients

1 cup pecans finely chopped
1 16 oz container of lowfat cottage cheees
2 cups Cornflakes
3 eggs beaten
1/2 cup red pepper finely chopped
1 package onion soup mix
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon spanish paprika
1 tablespoon olive oil
Tips
Delicious with ketchup as a "meatloaf" sandwich.You can substitute finely chopped carrots for the pepper or any other vegetable to make your own touches. You can also brush with barbeque sauce or add sprinkling of cheese.
Directions
Mix all ingredients together and divide into twelve muffin cups (I use ice cream scoop to make sure are even). Bake at 375 degrees for 30 minutes or until tops are brown. Muffins will get more solid as they cool.
