Ingredients

2 cups old fashioned oats*
2 teaspoons cinnamon
½ teaspoon nutmeg
1 teaspoon baking powder
¼ teaspoon salt
2 ripe bananas, mashed
2 eggs, lightly beaten
2 cups almond milk
2 tablespoons maple syrup
1 teaspoon vanilla extract
Tips
*To make this recipe gluten-free, use gluten-free oats
Directions
1.Preheat the oven to 350 degrees F. Lightly oil an 8” x 8” baking pan.
2.In a mixing bowl, combine all of the dry ingredients and stir.
3.In a separate mixing bowl, mash the bananas. Add the eggs and whisk them in with the mashed bananas. Add the remaining “wet” ingredients and stir.
4.Pour the dry ingredients in with the wet and stir to combine.
5.Pour this mixture into the oiled baking pan.
6.Bake in the oven for 35 to 40 minutes or until the center tests clean.
