Ingredients

    Honey, 4 tsp
    Active Dry Yeast, 4 tsp
    Whole Wheat Flour, 2 cup
    Flour, white, 1 cup
    Table Salt, 1 tsp
    Extra Virgin Olive Oil, 1 tbsp
    Warm Water, 1 cup

Tips

Honey can be substituted for agave, and any type of flour can be used. I have successfully used oat, rye, and unbleached/unbromated white flours in this recipe.

Also can be used in muffin tin as opposed to loaf pan for biscuits. Use flat cookie sheet if making buns. Divide dough into 12 sections, roll into balls and place in muffin cups or on cookie sheet. Bake as above. For buns, let rise while oven is heating, and then smash flat just before baking.


Directions

Proof yeast, honey and 1 tbsp white flour in 1 cup warm water (115*) for 10 minutes.
Stir in salt and oil.
Add enough flour so that dough is no longer sticky, but bouncy to the touch.
Let rise in warm place for 30 minutes. Then transfer dough to parchment lined loaf pan.
Pre-heat oven to 425* for 10 minutes, while dough is rising.
Bake for 10 minutes.
Turn oven down to 350* and bake for another 10 minutes. Remove from oven and let cool before slicing.
