Introduction

Ingredients

¾ cup coarsely ground pecans
2 cups finely diced dates
½ cup almond butter (raw, unsalted)
1/3 cup tahini (raw, unsalted)
1 1/3 cup dried unsweetened coconut
2/3 cup ground sunflower seeds
¼ tsp salt
¼ tsp vanilla
Tips
Addition
½ cup raw cacao powder (lots of antioxidants and yummy!)
Directions
Reserve one cup coconut. Combine all ingredients in food processor and mix together. (It can be done in a bowl with a stiff wooden spoon if you want your workout at the same time). If you want to retain the “crunch” of the pecans, fold them in last so they aren’t over processed. Form into balls and roll in remaining coconut.
Substitutions
Raisins, dried cranberries, peanuts cashews, brazil nuts, etc.
Serving Size: Makes approximately 30 balls if using melon sized scoop. You can make two pecan energy balls out of each scoop which makes them bite sized.
