Ingredients

    1/2 cup ham, visible fat removed and chopped
    4 hard-boiled eggs, chopped
    1/4 cup shredded reduced-fat Cheddar cheese
    1/2 teaspoon black pepper
    4 biscuits

Tips

Save a bit of fat by omitting the egg yolks. You can also serve your cheesy eggs and ham on toast. (Swapping toast for the biscuits will cut back on sodium.)


Directions

Preheat oven to 350 F.
Combine the ham, eggs, cheese and pepper in a medium bowl.
Split open the biscuits.
Divide the ham and egg mixture between the biscuits, then place on a baking sheet and heat until the cheese melts.
