Number of Servings: 8

Ingredients

    2 cups cooked quinoa
    4 cups chicken broth
    4 cups broccoli florets
    2 green onions, chopped
    1 tsp Extra Virgin Olive Oil
    1 LB chicken breasts, cut into bite size pieces
    5 tsp flour
    2 cups milk (skim)
    1/3 cup sour cream (fat free)
    8 oz shredded 2% cheddar cheese
    1/4 tsp salt
    1/4 tsp pepper
    1/4 tsp garlic powder

Directions

• Bring quinoa and chicken broth to a boil in a large pot, reduce heat and simmer for 10 minutes.
Add Broccoli and Onion on top to steam. cover and cook 5 minutes.
• Meanwhile, heat EVOO in a large skillet over medium high heat. Add chicken, season with salt, pepper, and garlic powder, and sauté until no longer pink. Remove to a plate and set aside then very carefully wipe out skillet with a dry paper towel.
• Turn heat down to medium then wisk together flour and ½ cup milk in a small bowl. Pour mixture into skillet then add remaining milk. Cook mixture, stirring constantly until thickened, 7-10 minutes. Remove from heat, add ¾ of the shredded cheese, sour cream, salt, pepper, and garlic powder, and stir until smooth.
• Preheat broiler. Spray 9x13 baking dish with non-stick spray. Combine quinoa and broccoli mix with cheese sauce then scoop the mixture into baking dish and top with remaining cheese. Broil until cheese is melted then let casserole rest for 5 minutes before serving.


Serving Size: makes 8 servings

    O.K.
    too much quinoa if cooking 2 cups in 4 cups broth. I halved that in order to get 2 cups cooked. that was plenty. followed the rest of the recipie but made the choice to not to add more salt, pepper and garlic powder to the cheese sauce since it was added to the meat already. - 10/13/19

    I really wanted to make this recipe but the ingredients say COOKED quinoa, and then the instructions say to cook the quinoa with the broth, now SURELY it isn't supposed to be 2 cups of dried quinoa. The instructions here are too confusing but I will make my own version based on this recipe - 5/6/19
