Ingredients

    15 bean dried mix
    vegetable broth 1 qt
    water 1 qt
    tomatoes (to taste) I used 4
    onion
    garlic (to taste) I used 2 large spoonfuls
    carrots (all I had on hand was baby, i used two servings)
    spices to taste, i used:
    salt
    pepper
    parsley
    chili powder
    crushed red pepper

    I tend to make this often with just whatever veggies I have around the house

Directions

soak beans overnight and follow directions on bag.
cook beans in vegetable broth and water
when mostly done add veggies and spices
this can serve more or less than 8 depending on the serving size. 1/8 of a pot is a large and very filling serving with lots of fiber and protein
