*Organic All-Purpose White Flour, 2 cup
Cinnamon, ground, 1 tsp

Applesauce, unsweetened, .5 cup
Honey, .5 cup
*Zucchini, shredded, 2 cup (2 med zucchini)
Granny smith apple - 1 med. apple, 1diced
Tips
Can try increasing the whole grain flours here and decreasing the white flour. This was my first time experimenting with a healthier version so will adjust next time. May need to adjust the baking soda/baking powder slightly depending on location, humidity etc. The whole grains tend to need more leavening.
Directions
preheat oven to 350 degrees F. Combine flour, cinnamon, baking soda, salt, baking powder, nutmeg, cardamom. In a separate bowl, combine eggs, sugars, honey, oil, zucchini, apple, applesauce. Add zucchini mixture to flour and stir just until combined. Grease 2 loaf pans and spoon batter into the prepared pans.
Cook 40-50 minutes or until a toothpick inserted into the middle of the loaf comes out clean. Let cool for a few mins in pan and then remove from pan and cool completely on racks.
