Ingredients

    1 box strawberry cake mix
    2 cups Diet Sprite
    2 egg whites
    1 jar Strawberry jam
    3/4 tub Cool Whip Lite
    4 oz (1/2 block) lite cream cheese
    1 t. vanilla

Directions

Add first three ingredients and whisk for 2 minutes by hand, or use blender on medium. Put a little batter in cupcake wrapper (enough to cover the bottom) and then about 1 T. of strawberry preserves (I like Polaner All-Fruit the best). Fill the rest of cupcake wrapper with batter until about 2/3 full. Follow recipe on box for cooking times (about 350 degrees for 16 minutes). Let cupcakes cool.

Frosting:
Mix Cool Whip and cream cheese with vanilla. Spread over cupcakes.

*Next time I'd use only about 1/4th of the block of cream cheese (2 oz.) and more Cool Whip to cut calories. These also had a strong cream cheese taste which I love! I added some red sprinkles on top too :)
