    1 tube Pillsbury Artisan whole wheat pizza crust
    1 15-16 oz jar light Alfredo sauce
    1 1/2 cups mozzarella cheese, reduced fat
    2 boneless skinless chicken thighs
    1 cup chopped spinach
    8 oz sliced mushrooms


On a cookie sheet, gently unroll pizza crust. Set aside. In a large frying pan heat olive oil over medium heat. Add chicken and season to taste with salt, pepper, and garlic powder. Cook chicken until no longer pink. Set aside on a plate. Add about 3/4 of the jar of alfredo sauce to the pan and heat over low heat. Season with Italian seasoning and garlic as desired. As the sauce heats up, use two forks to shred the chicken. After it's all shredded add to the sauce and stir. Allow to simmer over low heat for another 5-10 minutes. This keeps the meat moist so it doesn't dry out in the oven. Smooth alfredo mixture over crust. Sprinkle on cheese, followed by spinach and mushrooms. Bake for 16 minutes.
