Ingredients

    1/2 of a whole chicken (1000 grams or 2 lbs) **this includes the bones**
    approx 1/2 of a medium onion, chunked
    1 tsp extra virgin olive oil
    1 tbps dried rosemary

Tips

If you chose to do this recipe with a whole chicken, double the recipe of course but stuff your chicken with the rosemary and onion. Also cooking time would take you to 2-2 1/2 hours.


Directions

Chunk onion, place in botton of a roasting dish, sprinkle a bit of Rosemary on top. Place the halved chicken on top. rub the olive oil onto chicken, Sprinkle with salt and pepper to taste and the remaining rosemary.

Bake at 350 degrees for approx 1 to 1 1/2 hours. Make sure the internal temp of the meat is 165 degrees. Remove from oven and let rest for 10 minutes before carving.

Serving Size: makes approx 6 servings at 166 grams each (includes bone)
