Introduction
Huevos rancheros are one of my favorite breakfast foods, laden with lots of fat and carbs. This is a loose (very loose) quick, lite, and hearty egg dish I got inspired to make by huevos rancheros. Ingredients

2 Egg Whites
1 Whole Egg
1/2 C. Refried Beans (or black beans - Nutr. Info for Refried)
2 c. Baby Spinch (can sub 1/2 c. frozen spinach)
1/4 c. Salsa
2 Tbs. Light Sour Cream
Spritz of Canola/Olive Oil
Tips
For a real treat you can layer in some baked tortilla chips or chorizo, or for breakfast on the go you can throw this in a tortilla.
Directions
1) Place bean on a small plate.
2) Saute spinach until wilted and place onto of beans.
3) Scrabble egg and egg whites in a bowl, and cook in pan with light spritz of oil until cooked to your preference, then place onto of beans & spinach.
4) Top eggs with salsa and sour cream.
