Ingredients

    1 cup uncooked quinoa
    1.5 tsp cinnamon
    .5 tsp nutmeg
    2-3 dashes ground cloves
    1 apple, peeled and diced ** I sliced both a red and green apple and used half of each
    .25 cup raisins ** I used .25 cup of craisins and golden raisins mixed
    2 eggs
    2 cups skim milk
    .25 cup maple syrup
    .25 cup chopped almonds

Directions

Preheat oven to 350 degrees F. Grease a 7 x 11 inch baking dish.

In a small bowl, mix quinoa and spices. Pour in greased dish. Sprinkle apples and raisins over quinoa.

In same small bowl (this will tie in spices left in there), whisk eggs, milk, and syrup. Pour mixture over the fruit/quinoa. Sprinkle almonds over top.

Bake for 1 hour, or until set with minimal liquid.

Cool, cover, and refrigerate over night.

Cut and warm in microwave, best served with a dallop of vanilla greek yogurt (not calculated in recipe).
