Introduction

These yellow cupcakes or 9x13 cake can be served all year long. These yellow cupcakes or 9x13 cake can be served all year long.
Number of Servings: 18

Ingredients

    4 eggs
    1½ cups sugar
    1 cup oil
    (optional: ¾ cup ground almonds (or walnuts)--not figured into calorie count)
    1 cup potato starch
    1 teaspoon salt
    1 teaspoon baking powder
    1 T. vanilla

    Mix well & bake in 9 x 13 pan at 350 degrees for 1 hour (or bake in cupcake tins til toothpick comes out clean--about 35 min.)

Tips

Add 1/2 c. cocoa powder to all of the recipe, or just mix in half of the recipe to create a marble effect. Decrease vanilla if desired.


Directions

Mix well and bake for about an hour at 350. When toothpick comes out clean, it's done.
