Ingredients

    1 lb 93% ground turkey
    1.5 cups black beans
    1.5 cups cooked brown rice
    1 can rotel
    3/4 cup frozen corn kernels
    2 tsp chopped cilantro
    3 cloves chopped garlic
    3 poblano chili peppers(boiled til barely softened)
    1.5 cup kraft mexican queso quesadilla cheese

Directions

Brown ground turkey. Mix all ingredients but peppers and cheese. Stuff each half pepper with 1/6 of the mixture. Top with 1/4 cup cheese and bake until cheese is bubbly and slightly brown.

Serving Size: Makes 6 half pepper servings
