Ingredients

    2 Medium boneless skinless chicken breasts (Aprox 8 oz)
    Cut into chunks about 1/2 - 1inch thick.
    1 Medium yellow onion,quartered and separated.
    1 Large sweet green bell pepper, cut into 1/2 - 1 inch thick pieces.
    1/2 c. Orange juice.
    1 TBSP Soya sauce.
    1 TBSP (about 3 tsp) Granulated Sugar.
    1 tsp Garlic Powder.
    1 TBSP Toasted sesame seeds.
    Dash of Black pepper.

Tips

. Make sure to soak bamboo skewers for at least 1 hour in cold water so they will not burn.
. Marinate the chicken in the fridge for at least 45 mins or longer if you desire.
. Toast sesame seeds in dry pan over low heat while stirring often, remove and cool once golden brown.


Directions

In a large bowl, whisk together 1/4th c. orange juice (reserving the other 1/4 c.), 1/2 the soya sauce (reserving the other half), sugar, black pepper and garlic powder.
Add in chicken and turn to coat several times, cover with saran wrap and marinate in fridge for at least 45 minutes. Mean while, in microwave safe dish, add about 1/2 cup of water and the onion and green peppers. Microwave on high for aprox 5 mins, stirring half way through. Let cool and drain water out.
Mix together remaining 1/4th c. orange juice and 1/2 TBSP soya sauce, set aside for basting.
Remove chicken from fridge aprox 10-15 minutes before cooking to come to room temperature.
Thread chicken, onion and green peppers on bamboo skewers that have been soaked in cold water for at least 1 hour, alternating the chicken with the vegetables. Heat up well oiled George foreman grill (or bbq) and grill kabobs for aprox 10 minutes cooking in 2 batches if needed. Turn every few minutes and baste with mix of remaining orange juice and soya sauce until done. Serve sprinkled with toasted sesame seeds and enjoy!
