    1lb 99% fat free ground turkey (browned)
    2 c cooked, instant brown rice
    1 can black beans, rinsed and drained
    2 c frozen corn
    1.5 c chopped onion
    1 can enchilada sauce (low-fat)
    1 can diced tomatoes
    1 small can diced chiles
    1 small bottle taco bell resaurant style hot sauce
    1 pkg taco seasoning
    1 pkg (8oz) Kraft 2% Mexican 4cheese blend


Cook instant rice according to package directions.
Brown turkey with taco seasoning.

Combine all ingredients (reserving half of cheese) in a large bowl.

Transfer to 9 x 13" casserole dish and top with reserved cheese.

Bake at 350 degrees until cheese is melted and browned, approx 30 min.
