Ingredients

    1 head of cauliflower (chopped)
    2 Tbsp garlic powder
    2 Tbsp REAL BUTTER
    2-3 minced cloves of garlic
    4-5 Tbsp of chopped fresh chives
    Salt & Pepper to taste

Tips

-You can garnish with "add ins" like parmesan cheese, shredded cheddar, and bacon crumbles but make sure to add the calories for each item.
-Be careful not to burn the fresh minced garlic while sautéing, you're just warming it to bring out the flavor.
-You can mash this dish by hand but it will not have the nice creamy texture of using a processor and you will most likely be disappointed in the results. It should look like mashed potatoes.


Directions

Chop cauliflower into florets no bigger than 1 inch
Place florets into large sauce pan and add enough water that the florets are submerged.
Add garlic POWDER to the water and bring to a boil
Boil cauliflower for about 10-15 minutes or until tender
While cauliflower boils, saute' minced garlic in a small pan.
When cauliflower is tender, drain completely and add to food processor with butter and sautéed garlic.
Process until smooth.
Salt and Pepper to taste, garnish with chives.
