Introduction

Yummy and health packed bran muffins that are sure to please (almost) everyone! Yummy and health packed bran muffins that are sure to please (almost) everyone!
Number of Servings: 30

Ingredients

    1 1/2 c flour
    2 1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    1 1/2 c All-Bran Buds
    3/4 c milk
    1/2 c orange juice
    2 eggs
    1/4 c oil
    1/2 c brown sugar, packed
    1/2 cup raisins
    1 tsp cinnamon
    1 cup cubed apple
    1/4 c milk (additional)
    1/4 c orange juice (additional)

Directions

Stir together cereal, milk and juice, let soak until all liquid is absorbed.
In separate bowl mix together flour, baking powder, baking soda, cinnamon and salt.
Add eggs, oil and brown sugar to cereal mix and mix well.
Gradually add flour mixture, stir until combined, but don't overmix, the batter will be thick and lumpy (it is supposed to be like that)..
Stir in raisins and apples.
Add additional milk and orange juice and mix in.
Spoon batter into paper-lined muffin pan cups.
Bake for about 18 minutes on 400F until cake tester comes out clean.
Note: Do not overbake muffins or they will not be moist, but dried out.
