Number of Servings: 8

Ingredients

    Crust (3 ingredients) :
    - 2 eggs.
    - 2 cups of shredded/grated UNCOOKED cauliflower (216g).
    - 2 cups of shredded cheese of your choice.
    - Optional: Origano powder and black pepper.
    * DO NOT SALT as the cheese is already salted.

    Cooking crust:
    1) In a med bowl, mix: eggs, cauliflower and cheese (and seasoning if desired but no salt).
    2) In a big pan, ON PARCHMENT PAPER, spread the "dough" evenly making a really thin crust with the palm of your hand.
    Do not grease the parchment paper.
    3) Bake in oven on the middle rack at 450F for 15-17 min OR until golden brown.
    4) Let it cool if desired...until you make the sauce. Once cooled, flip it if you want but not necessary.


    Sauce:
    On medium heat, use a small sauce pan.
    - Heat 1 tbsp of lard or Coconut oil (I used lard but I calculated it as coc oil) and add in:
    - 1 garlic clove (2g) cut thinly. After 3-4 min, reduce heat to low and add in:
    - 3 tbsp of Aylmer tomatoe paste and a couple of tbsp of water for your favorite consistency of sauce. Simmer for 5 min or so. Remove from heat and add fresh origano and/or basil.
    - Optional: I added 1 tbsp of red hot pepper paste which is calculated in this recipe.


    Topping:
    Crumbled bacon "Kirkland" 115 g
    1 cup of shredded cheese.

    Bake back the pan at 450F. It'll only take a couple of minutes for the cheese to brown so stand next to the oven.
