Ingredients

1.5 cups jasmati (long grain white) rice
3 cups water
1.5 cups red kidney beans, rinsed well and drained
1.5 cups black beans, rinsed well and drained
1 cup chopped yellow onion
1 cup chopped bell peppers (red, green, yellow)
3 roma tomatoes, chopped
3 Tbs apple cider vinegar
1 Tbs Sriracha hot sauce
8 Ballpark all white meat turkey franks, sliced
1 Tbs garlic powder or 1 clove garlic, pressed
1 Tbs Mrs. Dash Extra Spicy Seasoning Blend
1 tsp oregano
1 tsp cumin
Directions
Chop onion, peppers and tomato to 1/4 inch dice.
Slice turkey franks into 1/2 inch pieces. Set aside.
Combine rice and water and bring to a boil.
Reduce heat and simmer 20 minutes.
While rice is simmering, melt butter in a large skillet. Add onions, peppers, and spices. Sauté 5 minutes.
Add tomatoes, beans, franks, hot sauce and vinegar.
Stir over medium-low heat 5 minutes.
Add cooked rice and mix well.
