Ingredients

    1 package barilla white fiber shells
    6 slices turkey bacon
    1 bunch spinach
    1 can low sodium diced tomatoes
    1 can low sodium chickpeas (drained)
    1 bag frozen mini broccoli florets
    4 tbsp light mayo
    6 tbsp plain greek yogurt
    1 package ranch dip mix


Tips

Directions

Boil water. Add pasta and frozen broccoli. Cook for approx 6 minutes or until al dente.

Meanwhile, cook bacon in a skillet and then dry on a paper towel in the freezer to cool.

Mix together mostly drained tomatoes, ranch seasoning, mayo and greek yogurt.

Drain pasta and broccoli and rinse in cold water. Add to sauce along with chickpeas and crumbled bacon. Stir gently.

Serving Size: makes 9 12 oz servings
