Introduction

This is a basic starter recipe.. you can add more basil, garlic or vinegar without changing stats by much. I like this on a salad of romaine as a side to chicken or steak. It's also good served as a topping on thinly sliced grilled bread spread with no fat or full fat cream cheese. Lots of yummy uses!

Ingredients

    3 cups diced tomato
    1.5 cups diced onion
    4 cloves minced garlic
12 leaves basil rolled and sliced thinly
    2 Tablespoons balsamic vinegar
    salt and pepper to taste

Directions

Mix all ingredients and leave at room temperature for a bit if serving now... It is also good refrigerated for later. When refrigerated it will continue to marinate and be tasty for days! Make a triple batch when tomatoes are coming out of your ears. Wondering if I could can this...

Serving Size: Makes about 5 cups. Stats are for 1 cup serving.
