Ingredients

    6 cup potato, 1/4" dice (6 small potatoes)
    3 cup cauliflower, 1/4" dice (1 med head, florets only)
    1 cup red bell pepper, 1/4" dice (1 large pepper)
    1 cup orange bell pepper, 1/4" dice (1 large pepper)
    1 cup yellow onion, 1/4" dice
    1 cup red onion, 1/4" dice
    2 plum tomatoes, 1/4" dice
    3 Tbl fresh lemon juice (1 med lemon)
    2 Tbl garlic powder
    2 Tbl curry powder
    2 tsp ground ginger
    2 tsp crushed red pepper flakes

Tips

Dice the onion and peppers while the potatoes and cauliflower get started to save 15 minutes time.


Directions

In a large skillet, heat olive oil to 350 degrees.
Add potatoes and cook 5 minutes.
Add cauliflower, stir to mix.
Add seasonings, cook 5 minutes.
Add pepper, tomatoes, onion and lemon juice. Stir. Adjust seasonings.
Cover and continue cooking 10 minutes or until potatoes are tender.

Serving Size: makes six 2-cup servings
