Introduction

My mother has been making this cake all of my life. It's one of my favorites. I may need to tweak the recipe to make it a little healthier. My mother has been making this cake all of my life. It's one of my favorites. I may need to tweak the recipe to make it a little healthier.
Number of Servings: 8

Ingredients

    1-1/2 cups sifted flour
    1 tsp. baking powder
    2 eggs, separated
    1/4 c. oil
    1/4 c. butter
    1 c. sugar
    1/3 c. milk
    1 tbsp lemon juice
    1-1/2 c. blueberries

Directions

Sift flour and baking powder together. Beat egg whites stiff and set aside. Combine oil with sugar and add egg yolks, beating well. Add the dry ingredients alternately with the milk. Fold in egg whites, lemon juice and the blueberries. Bake for 30 minutes in a greased bundt pan.

Serving Size: Make approximately 8- 2 inch pieces
