Introduction

My Pennsylvania Dutch grandmother used to make a baked rice pudding. She let a brown skin form and folded it in a couple of times during the baking process, which added a sweet, caramelized flavor to the dish. She also didn't let it set up like many rice puddings; it stayed a little on the soupy side. This is my attempt to replicate her rice pudding, but with more healthful ingredients. Ingredients

    * 2 Eggs, fresh, whole, raw
    * 4 Cups Milk, 1%
    * 1/4 Cup Granulated Sugar
    * 6 tsp Splenda Brown Sugar Blend
    * 1/2 Brown rice uncooked
    * 1 Tbsp I Can't Believe It's Not Butter, Regular (Soft) Spread
    * 1 tsp Vanilla Extract, 1 tsp
    * 1/8 tsp Nutmeg, ground, (or to taste)

    OPTIONAL: 1/2 Cup Raisins (not included in this nutritional calculation)

Directions

Preheat oven to 300 degrees F. Beat together the eggs and milk. Add sugar, sugar substitute, rice, butter, vanilla extract, and nutmeg. Pour into pan. Bake for 2 to 2.5 hours, stirring frequently during the first hour.

Serving Size: Makes approximately 8 servings.
