Number of Servings: 8

Ingredients

    1 box of Ancient Harvest quinoa pasta
    1 large can of tomato sauce
    1 large can of diced tomatoes including liquid
    2 tbsp. extra virgin olive oil
    1 tsp. minced garlic
    1 Vidalia onion cut into large pieces
    4 large green peppers, each cut into 8 pieces
    1 package Jennie-O turkey Italian sausage (4 links)
    Grated parmesan cheese


Directions

Cook pasta according to box directions and set aside. With kitchen shears, cut each sausage link into 4 equal pieces. In a large saucepan, cook sausage & garlic until sausage is slightly browned. Add onions and sauté for 5 minutes until onions are clear. Add peppers, diced tomatoes & tomato sauce. Bring to a boil, turn to low heat and simmer for an hour. Serve over pasta and sprinkle with grated cheese.

Serving Size: Makes 8 1-cup servings
