Introduction

Ingredients

    6 tomatoes
    1/2 red onion
    1 1/2 cucumbers (big) or three small
    1 red bell pepper
    1/2 small jalapeno
    a fist full of parsley
    1 oz chives
    2 stalks celery
    1/4 cup olive oil (the tasty stuff, it does make a difference in this recipe)
    1 tsp red wine vinegar
    1 tsp sugar
    1 tsp lemon juice
    1 tbsp Worcestershire
    1 dash Tobasco
    2 cups vegetable juice or broth (not V8)
    1-3 cloves garlic (to taste)
    salt and pepper to taste

Tips

Add tobasco, garlic, salt and pepper to taste - it gets stronger the longer it sits. I like to hold some of the cucumber out and sprinkle a little on top of each serving--or use the extra half-cucumber.


Directions

Roughly cut everything and put it all in a food processor, pulse until mixture is in very small pieces, chill, and eat.
The longer you let it sit the more the flavours infuse together. It freezes well and is a delicious lunch or dinner on a hot day.
