Ingredients

    12 eggs scrambled
    1tsp ground sage
    1tsp dried rosemary
    1tsp garlic powder
    1 med sweet onion
    1 bag frozen chopped potatoes
    1 pkg Mailhot's Best Downeast Breakfast Sausage browned
    1 cup finely shredded sharp cheddar cheese
    Approx 22 8" flour tortillas

Tips

Optional: Enjoy with picante sauce, salsa, or pico de gallo


Directions

Scramble eggs with seasonings, set aside. Chop onion and set aside. Brown sausage, add onion and cook until onions are opaque. Set aside sausage/onion mixture. Cook potatoes on griddle until soft and slightly browned. Stir into Sausage mixture and add eggs. Spoon egg/sausage/onion/potato mixture onto tortillas, top with cheese and wrap.

To freeze: Wrap each burrito tightly in plastic wrap, place into freezer bags and seal. Freeze for up to 3 months.

To reheat: Unwrap burrito completely. Wrap loosely in paper towel. Heat in microwave for 30 seconds and let sit 30 seconds. Reheat for another 30 seconds to warm through.
