Introduction

Ingredients

    2 refrigerate pie crusts
    1 lb lean ground beef
    1 large choppe onion
    1 ea Chopped Red and Green bell pepper
    3 large zucchini, sliced
    2 tbs flour
    2.5 Cups Mexican Cheese Blend
    4 eggs, beaten
    3 plum tomatoes, slice
    1.5 C Half and Half
    salt and pepper

Directions

Preheat over to 400 deg and place pie crusts in pie pans. Cook for 7 min. Remove from over and lower temp to 350
Cook ground beef and onion and peppers in skillet until cooked through. Add zucchini and cook 3 to 4 mintues longer. Remove from heat and stir in flour.
Layer beef mixture, cheese and tomatoes in partially baken crust. combine beaten eggs and half and half. pour over mixture in pan s. Bake 40 to 45 min or until knife inserted in center comes out clean. lET STAND 10 MINUTES.
