Number of Servings: 6


    2 large eggplants, cut in half lenthwise
    6 whole cloves of garlic, peeled
    1/4 c tahini
    juice of 2 lemons
    1/8 tsp cayenne pepper
    1 tsp kosher or sea salt
    2 Tbsp Olive Oil
    1/2 Tbsp dried cilantro
    1/2 c chopped tomatoes ( fresh)


can toast or bake pita triangle for dipping. I am using mine as a topper for my morning whole grain light English muffins. ENJOY


Place eggplant , cut side down and garlic on top of foil or parchment lined baking sheet. Bake at 375 degrees for 40 mins. until eggplant is soft. Cool until ready to handle. In food processor, place all ingredients into bowl and pulse until finely chopped but, not pureed. Taste for seasoning.

Serving Size: Makes 6 servings of spread/ 3 WW Points plus each serving
