Introduction

South Beach Diet Phase 1 friendly. I needed something quick and easy to grab and go in the morning for breakfast, and I'm sick of eggs and cheese and nuts! Ingredients

    2 cups part skim ricotta cheese
    4 eggs
    2 tsp cinnamon
    baking soda
    2 tsp vanilla extract
    5 - 8 packets of Splenda or other no cal sweetener to taste

Tips

I made these for the first time today, I baked them for 20 - 22 minutes each but might have needed to bake a little longer, they're a little wet (but they are made with egg & cheese!) I'm gonna try again and play with the time.


Directions

Mix all ingredients well, pour about 2 tbsp per muffin into muffin tin, bake for 20 - 30 minutes until toothpick comes out clean, makes about 12.

Serving Size: Makes about 12, using 2 tbsp or so of batter per muffin
