Ingredients

Waffle batter:
1 egg
1/4 c. whole wheat flour
2 Tbsp Oatmeal
1/2 tsp. baking powder
1/4 c. pumpkin
1/4 c. Greek Yogurt
2 T. milk, used unsweetened almond
spices to taste: cinnamon, nutmeg, ginger, cloves
1/4 tsp salt
1 packet of stevia or shot of Fuji Apple Skinny Girl flavor drops
Optional: (Not figured in the calorie count)
Topping:
1/2 apple
1 Tb. water
splash of lemon juice (Could add a little lemon rind too)
Stevia and cinnamon
Tips
Any fruit could work to top or apple butter would be amazing. I found adding 2 drops of honey made it much better.
Directions
Beat egg white until light. Set aside. Combine the remainder of the ingredients for waffles. Fold in egg whites. Put patter in a well greased waffle iron cook.
Serving Size: 1 or 2 waffles

Chop apple, peeled or unpeeled. In small pan cook apple and water until tender. Add sweetener (I used 1 packet of stevia) and cinnamon. Set aside.
