Ingredients

    Ingredients

    Simmer until soft:
    6c Apples, sliced
    1tsp Coriander seed
    1/2 tsp Ginger, ground
    1/2 tsp Salt
    1tsp Vanilla Extract
    1/2c Apple juice concentrate
    2T Honey

    MIX TOGETHER:
    3T Cornstarch
    1/4c Water

    CRUST ~ GRIND TOGETHER IN food processor/ Vitamix
    and DIVIDE IN HALF
    3/4c Oats, dry
    1/2 c Almonds
    1/2 c Coconut
    1tsp Salt

    ADD TO REMAINING HALF CRUST:
    1/3c Water
    1/2 c Oats, dry



Directions

Simmer apples w/ seasonings until soft
Mix cornstarch / water and add to soft apples

Mix crust in food processor or Vitamix *DIVIDE IN HALF
Roll out 1/2 and place in pie pan

CRUMBLE TOPPING:
Add water and additional oats to remaining half of dough in food processor. CHOP WHIZ until crumbly

Cover pie crust with thickened apple filling.
Top apples with CRUMBLE TOPPING.

Bake 350' for 40 minutes

NOTE: MAY COVER WITH FOIL FOR LAST 15 MINUTES
