Ingredients
-
***I only make 4 bars at a time because I like to alternate flavours, but feel free to make a bigger batch!***
2 tbsp 2 tsp tahini (or other nut butter, cashew would be perfect)
1/2 tsp rice vinegar (Apple cider might even work better)
Juice & Zest of one lemon
0.25 cup + 3 tbsp mashed banana (7tbsp)
7 tbsp Oats
1 scoop progressive vegan vanilla protein powder (Or other brand)
Salt to taste
Vanilla extract to taste
Tips
Add a pinch of baking powder for a better texture
Directions
Combine dry ingredients together in a large bowl
Mix wet ingredients in a medium bowl
Add wet to dry and mix thoroughly
Line a flat rectangular piece of tupperware with wax paper and press in your mixture. Spread evenly with a spoon or by laying a piece of wax paper on top and using your fingers.
Put in the freezer. I usually leave them overnight.
Once frozen, remove block from tupperware by grabbing the wax paper & cut into bars.
For a softer texture, keep in the fridge. I prefer a hard bar so I keep them in the freezer.
Enjoy!!
