Introduction

Ingredients

    3 oz garlic, sliced
    5 oz cayenne peppers, chopped
    6.5 oz onion, chopped
    1 T salt

Directions

This is a fermented pepper condiment. Very simple to make and will keep for a long time. Toss all ingredients together in a glass or stainless steel bowl. Pack into a quart size jar, pressing down firmly to both expel air and release the natural juices. Cover loosely with a cloth and let sit on the counter for 3-5 days depending on how hot the kitchen is. When it's sour enough for you, it's done.
