Ingredients

¼ cup canola oil
2 oz unsweetened chocolate
2/3 cup cane sugar or brown sugar
2 egg replacers
¼ cup unsweetened applesauce
½ cup crushed pineapple, drained
1 tsp vanilla
½ cup all-purpose flour
½ cup buckwheat flour
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1/4 cup chopped macadamia nuts
1 ½ cups icing sugar
5-6 tsp coconut milk
Directions
Preheat oven to 350F.
Combine oil and chocolate in saucepan and melt over low heat.
Beat together sugar and egg replacers.
Add chocolate mixture and applesauce, beat well.
Mix in pineapple and vanilla.
Combine flours, baking powder, baking soda and salt.
Stir into chocolate mixture until just combined.
Stir in chopped macadamia nuts.
Scrape into a thoroughly greased 9” pan.
Bake 30 minutes and cool completely.
In a small bowl, mix together the icing sugar and coconut milk until spreadable.
Spread over cooled brownies and chill until set.
