Ingredients

    1 Cup Cottage Cheese
    1 Cup Whole-Grain Oats
    1/2 can Pure Pumpkin
    3 eggs ( you can also use 6 egg whites instead )
    1 tbsp vanilla
    1 tsp cinnamon
    1 tsp pumpkin spice
    (you can also use a scoop of protein powder for additional protein)

Directions

Put eggs in blender first, add cottage cheese and pumpkin, vanilla, cinnamon and pumpkin spice then oats last. Blend till mixed.
Pour onto heated griddle at about 375 degrees. Cook until golden brown on bottom, flip and cook until golden brown on other side.
