Ingredients

    8 cups chicken broth
    2 bl/sl chicken breasts, cooked and chopped
    1 lg red onion, chopped
    2 cloves garlic, minced
    1 tsp. jalapeno pepper (or more!)
    1 lg potato, large dice
    2 med sweet potato, large dice
    1/4 cup tomato paste
    2 carrots, large dice
    1 bay leaf
    1 tsp. oregano
    1/4 tsp. -> 1 Tbl chipolte in adobo sauce (HOT)
    1/4 -> 3/4 tsp. roasted whole cumin, cracked

    1 med. summer squash, large dice
    1 red bell pepper, large dice
    cilantro
    mint
    juice of 1 lime

    cilantro
    lime wedges
    avocado


Directions

simmer first group of ingredients (broth through cumin) about 20 minutes

add 2nd group (summer squash, red pepper, fresh herbs, juice) and simmer an additional 15 minutes

serve with more fresh cilantro, lime wedges and avocado

can also serve with shredded cheese, sour cream, and tortilla chips (a lot of extra calories that aren't really needed!)

good with corn muffins and green salad
