Ingredients

    1.5 Tbsp extra virgin olive oil
    2 medium onions - diced
    1 clove garlic, crushed
    1 large boneless, skinless chicken breast (~8oz)
    2 Tbsp Better than Bouillon Vegetable Base, reconstituted with water to 6 cups vegetable stock
    1 tsp. herbs de Provence
    Salt & pepper to taste
    1.5 c. sliced zucchini (approx. 1/2 of a large squash)
    1 1/3 c. Trader Joe's Frozen Petite Peas
    1 1/4 c. frozen sliced carrots

Directions

In a large pot, saute chopped onions and garlic in olive oil until soft, add remaining ingredients. Bring to a boil, then reduce heat, cover, and cook for 20-30 minutes.
